CELLAR NOTES

Wines for Passover

Once again the crack winemaking team at Dalton put their heads together to come up with our annual Passover recommendations. This year four wines sprang to mind. Rosé 2010, Viognier Reserve 2009, Estate Zinfandel 2009 and Reserve Shiraz 2008. Each has their own individual character and charm.

The rosé is dashing pink colour, it is an elegant and refreshing wine, slightly off dry with a nose of rose petals, strawberry and pink grapefruit. The well-balanced palate offers crisp fruity finish. It is the ideal wine with which to transition into the summer months.

The Viognier Reserve, by contrast is a rich complex and very rewarding wine. The nose is laden with aromas of honey and peaches with hints of vanilla and warm toast. The wine is smooth and soft on the palate leaving a long lingering sensation on the palate.

The Estate (D) Zinfandel is new to the portfolio, but very much in keeping with the rest of the D series, it is much lighter than the Single Vineyard wine we have been previously producing, but incredibly fruity and it shares the very spicy characteristics so familiar with Zinfandel. We have been drinking it recently on various occasions and really enjoying it, so you should give it a try too.

Finally the Reserve Shiraz is a red wine with gravitas, it is not a tutti-frutti wine but rather a wine that shows off the earthier aspects of winemaking, more of a forest floor wine than a forest fruit wine. Whilst there are some characteristic jammy elements to the nose, there is also an influence of black pepper, liquorice and tobacco. The other beauty of this wine is that it is incredibly soft on the palate, all the tannins are nice and soft and the acidity is balance so as to be totally unintrusive.

We wish you all a very happy Passover and hope you enjoy the selection we have made for you.
