Asufa is our winemaker Guy Eshel’s personal playground at Dalton Winery; A series of moments and memories gathered throughout his time in the field, brought to life together here at Dalton. Each wine in this series tells a different story – some of the here and now, others of a time and place elsewhere – but all were made to add color and complexity to your dining experiences.

Blend

50% Petite Sirah. 25% Grenache. 25% Carignan

Vineyard

A blend from three different vineyards around Israel; Petite Sirah from Moshav Kidron, Grenache from Moshav Even Menachem, Carignan from Kfar Tabor.

Winemaking

Each parcel was harvested and vinified individually in stainless steel then transferred to oak for ten months. After which they were blended together and allowed to marry in barrel for a further two months. 12 Months total in barrel.

Tasting Notes

Levantina is a deep purple in colour with soft generous aromatics of ripe plums and blackberries layered with coffee, tobacco and coconut.

Dalton Wines are Kosher le Mehadrin and Kosher for Passover. They are supervised by Rabbanut of Israel, Badatz Yoreh Deyah, Rabbi Machpud, OU and Rabbi Mordechai Ungar of Monsey.
