Asufa is our winemaker Guy Eshel’s personal playground at Dalton Winery; A series of moments and memories gathered throughout his time in the field, brought to life together here at Dalton. Each wine in this series tells a different story – some of the here and now, others of a time and place elsewhere – but all were made to add color and complexity to your dining experiences.

Winemaking

Our Tic Toc Semillon was made to look forward to. A wine born of an appreciation of Semillon and its aging abilities that continues to enrich the wine as time goes by. For this reason, Tic Toc Semillon is released at least three years after bottling. From then on out, our playground becomes your own. The wine is 100% Semillon.

Vineyard

The grapes are grown in our Elkosh Vineyard in the Western Galilee. The vineyard is characterized by white chalky soil.

Production

The grapes were hand-picked early with low sugar and relatively high acidity allowing the wine to develop greener aromatics. The juice was fermented in stainless steel tanks and allowed to sit on light leed for a further five months before bottling. The wine was cellared for two years before release.

Tasting Notes

The wine is a full bodied white wine with aromas of guyava and tropical fruit. It is soft on the palate with a long velvety vanilla finish.

Serving Suggestions

Tic Toc is a wonderful with sushi and fish dishes also spicy and Asian foods.

Tasting Notes

Semillon is a rich and complex wine with refreshing acidity, notes of citrus, waxy salinity and lots of minerality. The wine is made to age for many years.

Kosher

Dalton Wines are Kosher le Mehadrin and Kosher for Passover. They are supervised by Rabbanut of Israel, Badatz Yoreh Deyah, Rabbi Machpud, OU and Rabbi Mordechai Ungar of Monsey.
